My First Homemade Weeknight Meal of 2012

 

Tonight, I was determined and inspired to bring one of my 2012 resolutions to life: cook a homemade meal for Bo and I at least once a week.

This sounds like a simple task since there are five week nights in a week and that means I only have to cook 20% of the time, but it’s a very common week when we order in or pick up takeout every night due to our busy schedules, empty fridge, or lack of motivation. Even though we didn’t land back in NYC last night until past 9pm, I made a shopping list for the week last night and printed it out so I could reference it at the grocery store today. In addition, being able to leave work at 5:30 on a Tuesday made going to the grocery store and cooking much less daunting on a week night.

001By 6:30 I was home and unloading four bags of groceries; enough ingredients for four weeknight meals as well as the components for breakfasts, lunches, and snacks.

Bo and I are lucky to have a kitchen which includes a microwave, dishwasher, and oven as many New Yorkers do not have these simple kitchen items which many Americans take for granted each day.  The time I spent in the kitchen tonight was more relaxing than I remembered and was a wonderful way to relieve a Monday’s worth of stress.

Tonight’s menu was very simple and a perfect way to ease into week night cooking.

Menu

Simple salad (lettuce, tomatoes, herbs, shallots, salt, pepper, and Annie’s low fat dressing)

Steamed green beans dressed in Garlic Gold and olive oil

Grilled pork chops rubbed in Rub with Love 

002 004 I referenced an old favorite cookbook of ours, Weber’s Real Grilling, for the pork temperatures and cooking times. If you find yourself grilling often, indoors or out, I highly recommend this beautiful cookbook. It is a dummies guide to cooking delicious meats and vegetables and after five years of use we’ve yet to find a recipe we don’t like.

010 008 Ten minutes later, from start to finish, dinner was plated. The pork chops only took 7 minutes to cook and I steamed the green beans at the same time. While the pork chop rested, I made my simple salad and set a place at the table.

Also, as part of the Food Journal 30 Day Challenge, I will be logging all my bites, nibbles, and meals on Weight Watchers. During my original weight loss journey, during which I lost more than forty pounds on Weight Watchers I tracked my food at least five days each week. I think this will be a great way to keep myself accountable as I begin training for my upcoming half marathon and focus on returning to my Lifetime Weight Watchers goal weight (150 pounds). I’m trying to figure out an easy way to share this with you each day so please let me know if you have any suggestions. For now, all I know is to snap a picture of my journal.

Little Victories and Little Changes

I’m a firm believer in recognizing the little victories just as much as the big victories.  Sometimes we lose focus or become discouraged along the path to a larger goal when we don’t time to step back, reflect, and appreciate the headway we’ve made.

For some people, like myself, this week’s little victory could come in the form of successfully taking vitamins and supplements each day. Who knew that vitamins are much easier to remember when they are kept in sight. Therefore, I’ve moved my vitamin bottle to the same drawer as my computer. Each morning when I open my drawer to get my computer the bottle of vitamins is staring me in the face screaming “EAT ME..with food.’”

IMG_3257 (640x478) Or, it could be enjoying a preview screening of Captain America with your office and not being tempted by the pile of snacks being offered, free of charge. It isn’t easy being responsible for distributing 10 packs of gummies and candy before the movie and not savoring one sweet piece.

IMG_3241 (640x478) IMG_3242 (478x640) By the way, while Chris Evans and Sebastian Stan aren’t bad to look at for two hours, I’d save your money for rental charges versus movie theatre prices.

For me, this week’s biggest victory, was stepping back through the doors of Weight Watchers and committing myself to weekly weigh-ins during marathon training. Luckily, the new Midtown New York City Weight Watchers just opened this week and is gorgeous!  IMG_3255 (640x478) IMG_3256 (640x478) Don’t get me wrong, it wasn’t as if I’d suddenly gone of track. Instead, it was very much the opposite. I have been making small changes over the past two months but hadn’t stepped on a scale to see whether anything was paying off. In addition, my body is changing in ways I’ve never seen due to my personal training sessions. While the new definition is great, some of it also comes with disadvantages which had me questioning my headway. Therefore, instead of avoiding the scale any longer, I embraced it and have decided to make it part of my Friday rest days. Taking my rest day on Friday means I get to sleep in an hour later, have a relaxed shower, weigh-in, and then grab an iced tea or coffee all before 9am. IMG_3254 (478x640)

Similar to Monica, I’ve focused the past few weeks on improving my intuitive eating skills. While I always eat my breakfast as soon as I sit down at work, around 8:30am, I’ve stopped scheduling my lunch time. Instead, I listen to my stomach and enjoy a breath of fresh air for an afternoon lunch trip across the street whenever the growls begin.

Since making this change my lunch time has gone from 12pm to almost 1:30. This in turn has also helped me deal with the afternoon cravings I was getting for as long as I can remember. Around 3pm I’d be hungry and around 4pm the sugar cravings would start.

In keeping with the intuitive eating, I allow myself an afternoon snack. But, instead of going for the leftover cookie tray that haunts me on a daily basis, I bring a fresh “sugary” snack of home.

IMG_3258 (640x478) My trainer, Lauren, recommended including some healthy sugar in my afternoon snack instead of just trying to cure the craving with something very low calorie such as carrots and hummus or an apple. This trick clearly wasn’t working for me since I’d often have that snack and then, within two hours, resort to the cookie tray. I had become that girl who would grab a cookie, imagining no one would see me, and eat it before co-workers could notice. Not good, not good.

For the past 3 weeks, enjoying an afternoon snack of greek yogurt which includes some sugar from fruit, such as my current favorite, Chobani 0% lemon or peach, along with a 1/3 portion of Kashi ceral has left me satiated and fueled for late afternoon productivity.

Today, my victory was finally regaining my 25 pound weight loss award. A few years ago, I lost over 50 pounds with Weight Watchers and then, due to health needs I was forced to regain some of it. Well, that some of it eventually turned into a lot of it over the course of two years which included a new job, moving in with Bo, a marriage, and marathon training.

IMG_3262 (640x478) Since March, I’ve made a concerted effort to take the weight back off slowly, healthier than before, and without totally changing my lifestyle. The first time around I went cold turkey on lots of my favorite foods, sacrificed many nights of beers and laughing with friends, and was afraid of having olive oil and balsamic on my salad. I thought that a touch of fat would kill me.

Losing ten pounds over the past few months hasn’t been easy. But, knowing that I’ve done this while also developing amazing strength and muscle through personal training, eating more natural and whole foods, and enjoying plenty of amazing trips and travels along the way makes me smile a hell of a lot.

Life is good around here.

Good Mood Day

 

Some days are just wonderful from the beginning! Maybe 7 amazing hours of sleep had something to do with it!

I took today off from working out since my hamstrings were still quite sore after my two PT sessions this week and I’d run 3 days in a row. This was one of the first times I haven’t felt guilty about not working out on a week day. Normally I work out Monday through Friday and take one weekend day off. I want to ensure that I don’t burn out during marathon training.

Today’s good mood started when I got dressed for work. I tried on a pair of linen pants on a whim hoping that they would finally fit again. I hadn’t worn them since our honeymoon but even then they were a little tight. Success! They were actually loose! I loved my outfit today and couldn’t stop smiling! I apologize for the rough 7am picture.

Before heading to the office, I stopped in at Weight Watchers for my weekly weigh-in. I was down 1.0 lb! This means that I’ve had a constant decrease for four weeks in a row! I’m really enjoying this regular accountability and I’ve made some new friends in the process. Hi Mary! The morning receptionist and the crowd is hilarious. Every week there has been a different conversation taking place while I step on the scale. This morning was a Whole Foods vs Trader Joes conversation. Who is your favorite? Why? As of now I’m a Whole Foods loyalist since their lines are more manageable than the horrible Union Square Trader Joe lines. But, I’m hoping to check out the new Trader Joes on Sunday.

Breakfast

Breakfast this morning was delicious and refreshing! This bowl was a great find at Target when Leslie and I went there during my DC trip. It was only $0.99 but is my “work” bowl since it’s dishwasher safe and stands out.

Lunch today was unfortunately not pictured due to a dead camera battery. But, Chop’t has updated their menu and it now features delicious heirloom tomatoes! YUM!

Dinner

Bo and I enjoyed a date night together since we’ll be in different cities this weekend. We’ve passed Japonaise almost daily since we moved to Gramercy. Blog Pictures 2010 640

Tonight we decided to give it a try due to it’s outdoor seating and fun atmosphere. Blog Pictures 2010 642 

In addition, it allowed for a compromise between two people craving totally opposite foods. I wanted fish while Bo wanted barbeque or at least meat.

Overall, the service was terrific and the food was delicious.

We shared two appetizers, “The Rock” and “Tuna Tuna Roll”.

Blog Pictures 2010 645 The rock was thinly sliced marinated new york strip steak which we were able to cook on a hot rock. The rock stayed hot for 5 minutes which meant we prepared this first. The meat was DELICIOUS and perfectly seasoned! I only had two pieces as I was more excited for the special roll!

The tuna tuna roll featured salmon inside with sliced tuna on top surrounded by an avocado wasabi tobiko foam. This was very fresh though I wish they used less rice. I only ate the rice from two pieces but enjoyed the fish from four in total. The wasabi tobiko foam was an interesting touch.

Their Grilled Hamachi answered my fish craving while also delighting my love of mushrooms. This was perfectly cooked hamachi served with a wild mushroom broth. The portion was perfect for sharing as it was on the larger side.

Blog Pictures 2010 646 Bo’s meal was HUGE! The Japanese Ribs definitely tested his hunger and in the end the ribs one. These were perfectly tender and almost fell off the bone. The seasoning was a perfect hickory miso blend. Unfortunately, the vegetables left something to be desired and were therefore pretty much untouched. They were bland and dripping in a mayonnaise like sauce. Blog Pictures 2010 647

If you’re looking for a great Japanese fusion restaurant near Union Square, I recommend Japonaise. It is reasonably priced for the portions and quality. My only suggestion would be to bear in mind all portions are quite large. We left wishing we’d split an appetizer as we couldn’t finish the appetizers or our meals.
